You’re probably using too high a heat. Try low heat. Also try clarified butter. That’s butter melted with the fat scraped off. So you just have the clear stuff. the fat in solid butter is what burns and turns your egg edges brown. But it’s not needed. I just live with slightly browned edges and kinda like them.

this is the technique i used to make an asian style sticky rice. It works well with a shorter grain rice. I think here in california i use a calrose rice too or a sweet rice. the key is to rince it first and to steam not boil.

i just use equal parts by 4 oz vegatable oil and 4 oz flour both by weight. gradually stirring in the flour. And you have to keep stirring so it does’t burn.
you can’t season a nonstick pan. you’d season like a carbon steel pan. But for nonstick you should stick to lower heat and you won’t burn off your coating. Like great for eggs. I you want a higher heat pan a steel pan would be a bit better.
i would agree on having problematic beans if they are firm after soaking. I have soaked for an entire day too. I just forgot but they worked fine. it probably helped the cook faster.
