For skirt and flank steak, you can use a simpler version of this as a marinade for fajitas. Olive oil, lime juice, and garlic form the base. Add other stuff to taste (perhaps some combo of salt, pepper, onion powder, brown sugar, tequila, chiles, cilantro). The marinade both flavors and tenderizes the meat.
