Seems bizarre to me that you can simply just forget about such an element of your game and never reconsider them. Especially when they were constantly trying to shoe-horn the idea of CHOICE and multiple paths the whole time!
That's the main complaint about the design, the fact that there was a lack of it. Everyone wanted exactly wanted you described: alternate ways around/through the boss fights.
Yeah, well... they succeeded in making it playable. The complaint was specifically that there was alternate path. In the original game you could talk them down with persuasion, set traps for them, sneak around them OR even just straight-up run away from them.

100% agree with this. He had the passion but his passion never really translated to a good video game experience. He definitely wanted his games to be something special but they're all... strictly average.
I've never really understood the Zelda comparison. Sure it has items you find in a dungeon to solve a certain puzzle... but at the same time so does God of War. And the combat is also a lot more similar to God of War. Generally, I felt as if this game was a more open (but still not very) world style God of War game.
I've been playing this series on the 360 but I recently got a new PC so I wish I could import it cross-platform somehow. :(

You can turn the game to Peaceful mode which eliminates all monsters and you can absolutely have your own server (on the PC - not sure about the 360 version).
It's basically Lego/building blocks. You make whatever you want in the randomly generated world. There are villages to discover and "strongholds" - which house a way to face the Final Boss.

What about the 6 year development time? Sure it's "finished" but they also felt the need to leave out a vital part of the story about some goddess and shoe-horn it into some novel that branches the gap between the games.
This is basically Mass Effect Online just on the other side of the galaxy.
Linear MMO? Quite easily. See any Korean MMO or, in fact, generally any MMO. They're mostly GRINDFESTS.
