Am I the only one and saw the limes and avocado as exceptionally wasteful choices? More tomatoes (1 tomato...really?) would go a long way to provide flavor for the beans and rice. Round where I live limes are going per lime (due to the lime shortage caused by the cartels...no I am not joking).

In fairness, those beans will go a long way. Boil them up with some of that extensive lime and cilantro and you can toss them in the eggs with some brown rice. I still don’t see this feeding two growing kids for a week though.
