I've found that the jailbreak-only app SBSettings is a lifesaver for cutting down on extra crap you don't need. It lets me turn off the 3G/EDGE/WiFi/whatever you Americans use, and BlueTooth separately, and also has an integrated task manager so you can turn off the iPod or Mail when you're not using them.
