There's multiple seat options, with a 40/20/40 split bench, to a full bucket / center console setup. Depends on your model.

Agreed, but I'm not sure the product always dictates the experience. I believe there is a time and place for both. I am also aware dealerships are aware, too.

I'm also sure the dealer didn't want a big "You abused an elderly person!" story coming at them. Looking at the margins on most subcompacts, I don't care how big your finance reserve is, it's probably not worth it.
