Or, get a coffee-solution that makes an espresso-like base. I use an Aeropress, but mokas do the same.. Make it hot, espresso-style, and then add ice cubes. Mine makes a single serving of perfect iced coffee in about a minute with virtually no cleanup.

I think the taste many home cooks forget is acid. A splash of vinegar or citrus juice sometimes elevates the good to the great. Japanese rice vinegar is mild, so it’s my go-to. But lime juice can be just the ticket sometimes as well.

While it is definitely, without a doubt, more accurate to measure by weight, I feel like it’s more crucial with finicky pastries or cakes than it is with pancakes, especially if you’re using self-rising flour, where the ratios of leavening ingredients to flour are already accounted for.

I have a Searzall, having backed the Kickstarter project. It is very effective in accomplishing the Maillard reaction for my steaks, chicken, and pork. I recommend it, and you can even cook grilled cheese sandwiches with it too.

OK, but why is this the thing you most want to know about? Wouldn’t you rather know what pesticides were used, and how much? Or what “spices” on the ingredient label is supposed to mean? Or the grades the processing plant got in their most recent inspection?

Agree...I just meant that most people (including me) thought the tax liability ended at death, and we need to know the facts for proper estate planning—even if it’s not a very big estate.

If you buy farmed salmon, you have to be careful of its source. Chilean farmed salmon is not the same as Norwegian. Up here in the Pacific Northwest, I mostly see wild-caught salmon at the grocery stores, unlike how it was 15 years ago when you’d see farmed and wild, side by side.
