Totally agree. It’s hard to convey to clients that I can’t really tell them they can do anything. All I can do is tell them what I think will minimize their risk. It’s a hard line to walk without being seen as an impediment to doing business.

I’m no expert here, but I suspect that meat is a “maybe” depending on the conditions. Dry aged meat often has mold on the outside, which is cut away to reveal the steak. Usually, that’s on the “fat cap”—a dense area of fat that would prevent spoilage of the interior. It’s usually also desiccated during the dry age
