Personal opinion: her not wanting to dress older is actually a sign that she is more mature than her peers. At her age I’m sure I would have loved to dress myself solely in glitter and sequins, but I was too immature, self-conscious and worried about standing out and being different so I dressed older and much less fun

I don’t think it’s entirely out of left field. The last time she sees John she says that the people of Westeros, will never love her only fear her. She has now put King’s Landing to the torch after they surrendered the city. It seems unlikely the rest of Westeros is going to put up a fight now.
