Generally, liquids can be swapped out in like amounts. I’ve made the recipe (similar, but not the same as this one) with all buttermilk, 25% buttermilk, and with a can of lager beer (PBR being my fav).

I've run into some nasty chunks when I've restored a pan, and if all else fails I've taken a sandblaster to it. Definitely try electrolysis and the oven cleaner method first though. Check out your local recycled building materials warehouse as well. I've come across plenty of old, rusted cast iron pans that cleaned up wonderfully (using the electrolysis method mentioned about) and I use on an almost daily basis. $7 for a 12" unmarked Griswold? Yes please!

The argument against using the sprays will point out the additives (propellants, etc) that are included will incorporate into the seasoning. I don't know if that's good or bad, but it's been enough to keep me using regular oil or bacon fat.
