I my defense I never claimed minimalism in this design and I wouldn't use giant squares if I did.
I'm not looking at the app atm, but if you edit the icon in L7, it should be the dropdown at the bottom of the list. There should be several 'modification' options including 'add unread gmail count' (or something to that effect)

I think it's actually a rather elegant way to integrate microsoft's different devices and update to their new style, while still maintaining backwards compatibility.
Growing up in restaurants, I call shenanigans on that first point. The real reason (generally) is that there are often not enough servers working to man that many tables and it's inefficient to have more servers on when customers aren't guaranteed. Servers don't like waiting around at work without tables.
