I don’t know if I could talk myself into non browning the beef first. I’m a creature of habit, and not browning it makes me think of sad crock-pot roasts. Also, most beef braises I’ve liked have some acid... a vinegar or something. I don’t know if the tomato is enough, but I’d be willing to give it a go.
