Dang this sounds slamming! I’ve long been a proponent of potatoes-in-sandwiches, but I’m totally unfamiliar with this. My platonic ideal is what is sometimes referred to as a “village style” gyro i.e. a gyro with fries as one of the fillings, or iterations of the “fat sandwiches” from the Rutgers grease trucks…

Classics has been one of my most often used cookbooks for more than a decade. I was planning on using it tonight. The recipes are good because you can combine them, like when I will be layering a couple of the sauces in there with homemade pasta to make lasagna.

Two thoughts:

I agree with you in principle, but nothing wrong with carrying over these ancient (and yes, stupid) dietary laws into a nice tradition that communities pass down the generations. Every religion has their own and a lot of times produces some wonderful food. 

I take solace in knowing that he was able to hear the news that the Tennessee Valley coal plant that destroyed Paradise Kentucky was shut down right before he passed.

On behalf of my employer, a company that makes several styles of cooling grids, PLEASE ensure that the rack/grid you are using is made for oven use.
