I would never buy a new car. I love Mustangs, but would want to build a custom one over buying a new one. For that reason, all I care about is that Ford upholds the Mustangs image against the competition while ensuring that they sell enough to continue it's legacy into the foreseeable future

Economy of size. If they made your version, they would have less people buying the nicer ones. If they make less of the nice ones, the parts cost more, meaning the cars cost more.
