Percentages from here. That the fat is taken out means that it has a much higher glycemic response from the body: there is no fat to modulate the lactose. And why not use percentages? There is a much higher percentage of sugar in skim milk, and the way the body responds to it is distinct.

Lactaid is great. It has more lactase not more lactose! Lactose is the milk sugar; and lactase is the enzyme that breaks it down.

You’d be wrong. Check the labels of standard manufactured milk. Because ‘skim’ milk was so unpalatable when introduced to the American public; milk producers began to add lactose (milk sugar) to appeal to a broader public. A quick trip to your supermarket can confirm this.
