I dunno, do we really need another moonshine?  Ireland’s got so much great stuff to drink already.  I equate drinking the raw stuff to stopping a meal when it’s half cooked and just eating it then.  Let a drink become the fullest, most expressive iteration of itself before you down it, I say.
