Also, “true.” Having worked in several different kinds of restaurants for many years, I can say he/she’s pretty spot on.

I worked in a high end farm to table steak house. We house aged our beef and made our own charcuterie. Everything was on point. Animals were sustainably raised in Ohio and we broke them down in house. When someone ordered a well done steak it was thrown to the back of the broiler and then microwaved (chef Mike).

I think what a lot of people don’t get is that the restaurant biz bitching about well done steaks isn’t 100% to do with it just being wrong to cook a steak that way. Or it ruining the steak. Its not a judgement on a customers personal tastes.

To add to this, I like especially spicy food, but more specifically, food that has had its flavor balanced to be especially spicy. Spice for spice’s sake is a complete travesty and I only ask for spicier food at places I know where the cooks do a good job adjusting flavors for heat levels.
