Watching it again now, it seems like the inside of the pie was full of (some dead) doves, presumably from Joffrey's sword. So perhaps they just showed that to the audience so we'd see how incompetent he was at a simple act like cutting a pie. Or that G.O.B.'s in on it.

Yup, that shot seems like the key to the whole thing. And old-lady Tyrell's comments about who kills a person at their own wedding, along with the fact that Margaery was married to Renly… Tyrells have to be suspect number one.

By spending so much time on the so-called "dull" moments and catching-up, the show made the end results all the more shocking. Something like this happening in the action-packed 'Blackwater' episode wouldn't be nearly as surprising; half the fun is in the buildup.

I think a lot of it is just fueled by the cultural conversation. Like LOST and The Sopranos, people like watching shows that others watch. Once a show like The Walking Dead or Game of Thrones builds a core fandom and becomes a 'water cooler' show, then others watch just so they can take part in the discussion.
