The problem is that 19th century industrial mentality doesn’t allow for a shift in normal business hours and certainly not a gentle shift as the seasons changed. But that is likely what happened before the railroads and time zones. The birds and other critters gently adjust day by day as the seasons change.
The correct time is local noon. Everything else is artificial.
‘more in sync’ depends on where in the time zone you are. Those of us who live on the edges of time zones, which edge it is defines what makes more sense, what is more in sync.

No matter which system is chosen as permanent some people get the short end of the stick because of time zones. Either it’s those on the eastern edges of a time zone or those on the western edges. Those on the western edges suffer for DST those on eastern edges suffer for ST.
Portillo’s usually choose their locations and set up their buildings so the line wraps around the building and stays in their parking lot. If it gets really long it spills out into a shopping center parking lot. It all stays on private property. I can’t recall seeing a line worse than that.
