Sure, but with the extra weight of the camper stuff it would probably be less. I was estimating the MPG based on the old Escape Hybrid which is rated at 31 mpg on the highway. Ford is missing a huge opportunity not putting their hybrid system in the Transit Connect and selling them to delivery companies and RV makers. A modern VW-like camper that gets in the upper 20's mpg would sell a shit load.
