you should try what is suggested here. i've never done this, but i always get good advice from their forum

plug it in and download the update. when it's done, follow the above instructions to re-jailbreak. i recommend restoring as a new phone after the update just to start fresh, but either way it should work :)

you should try wifisync. it's much more convenient than usb syncing and just as fast! only down side is you have to be jailbroken
