I love using the near-death salad greens into a pesto, especially an oregano walnut pesto I made recently. It really stretches the amount of final product you’re getting with only a bit of the more flavorful herbs (I won’t say more expensive, since mine is a garden plant gone rampant.)

Ooh, I’d never thought of using nutritional yeast in pesto before. I have a couple of pots of basil plants, and I wanted make piles of pesto and share with a vegan buddy. This sounds perfect *and* vegan-friendly.
