Sadly for, the marbling that makes high end steak taste great also affects the taste of ground beef. If money was no object, would you want your burger made from the scraps of a cow or would you prefer it made from some decent ribeye?
Note your choice of “largely” rather than “completely”. When I was growing up, my mother rinsed the ground beef just like in the video. I stopped “doing it her way” when the task of cooking was passed on to me. The flavor difference was like night and day.
