Using words like "gentleman" and "lady" in this context is a waitstaff trick - if you say "Hey, you dirtbags didn't pay!" then the guys run out. Calling them gentlemen stops them, as they (you) think "Oh, I'm a gentleman, I'm not supposed to dine and dash, which is different from eat and run."
