I think the issue here is that they didn't even bother to really heat up the premade tortillas, so they came across as stodgy.

I have an angel food cake recipe down by memory, but that's about it. If I were doing the competition, I would probably cram a few easy recipes in that I could repurpose with ethnic ingredients as necessary…and also only try to get stuck with dessert if I have immunity. http://bit.ly/uTaMai
They might have been able to get away with just buying some premade corn masa and making the tortillas from that…it's not quite 100% authentic, but it would have been better than what they had and it would have been less time consuming to make them.
Seriously. If Chuy has all kinds of goat-slaughtering experience, you'd think he'd be able to whip up some tortillas. Though, I can see the judges (who can be fickle) giving Chuy crap if his team lost and all he'd done was make corn tortillas.
Agreed…if time were that big a concern, don't elect to make a dish that is going to be so labor intensive that your only option for making enough for everyone is to go precooked. Haven't these chefs watched the show before? http://bit.ly/uTaMai

I think Blanca acquitted herself well considering the company she was keeping at her big party. If I were a fifteen-year-old faced with Chef Tom and Chef Hugh, I'm not sure I would have been as articulate with my criticisms. She came off well, not like one of those crazy girls from "My Super Sweet 16".
Part of the problem is that cheftestants are forbidden from bringing in recipes, so they have to memorize any pastries they might want to attempt. Another issue is how to scale recipes depending upon how many will be served. All that needs to happen is that the chef puts in a touch too much butter or baking powder…
