Really? If it's an easter egg, it's hardly noticeable. The whole gravedigger theory is basically complete conjecture on the fans' part, because there's nothing in the book to specifically state it's the Hound.
If the Hound is the gravedigger (which I hope is true but don't think), then it's for some larger purpose. In which case they'll leave the door open for it.
