I'm sorry but I think you're just completely wrong about this.
Parodying a song may not be the most original thing in the world, just like telling the Aristocrats isn't the most original thing in the world. But Coulton's arrangement was extremely specific, just like Gottfried's Aristocrats was extremely specific.

OK, so what about, for example, the "Aristocrats" joke as told by Gilbert Gottfried? If I were to copy that delivery exactly, and not give credit to Gottfried, that would be pretty heinous — even though the joke itself has been told dozens of times. Right?

Wrong.
Coulton's version of Baby Got Back was a parody. It was, let's face it, supposed to make you laugh. In essence, it was a totally original joke. Glee ripped the joke off and pretended it was their own by not giving credit to its author.
Sir Mix-A-Lot did not make a jokey rendition of "Baby Got Back," and Glee

I love how the kid in the audience is just thrilled to be hearing something so funny and original.

Coulton arranged the song in an original way, transforming it into something entirely different, a brand new creation. Glee copied him.
