They didn't cast the actor who played the Greatjon for the Red Wedding scene, so we didn't see him die there, but it makes no sense that he wasn't there without some explanation. Plus all the Umber rank and file that were slaughtered outside the hall, it's just strange book/show disconnect.

Plot-wise, he's one of those characters who humanize things, and serve to ground and give good advice to the bigger actors (like Varys, Jorah and Sam).
