You mention "not understanding the mechanics" of Justin making Dolan sign the confession; I always figured it was a sort-of callback to Justin having the doctor write his manifesto for him, while he was in the sanitarium in season one.

As discussed above, the Coke.Pepsi thing is a myth.  However, Mormons do have prominent positions/ownership throughout the Las Vegas gaming establishment, in spite of the Mormon view against gambling.  They got their foot in to the door when they were seen by LV bosses as being immune/resistant to many of the pitfalls

I was very pleased to read the shout-out for the scene of young-CSM placing the flag on the ground in front of the aliens.  That's always been one of my favorite visuals in the series.
