I'm pretty sure the key plot point for the baby having Down's was that the adoptive parents no longer wanted him.  That set up Sheila and Jody's "kidnapping" the baby from Karen.  Yes, and it did show (again) what a dick Karen is.

It seems like they're going to be around for a while.  The actor who plays Jody was just promoted to a regular for Season 3.

That character always strikes me as under-developed.  It's like they had more for him to do, but either never did it or it got cut.
