My DM uses the 1st and 3rd of those. It was worked well for 4 noobs (we started playing mid last year, and were all new to D&D). We have gotten lucky a few times, but for the most part it feels pretty balanced. The threat of death is real, but we can survive a few unlucky rolls.

I had never played until about 6 months ago. We play once every couple of weeks, and have a blast. I suspect that the group you play with makes all the difference. It's a good mix of everyone taking it (mostly) seriously enough that the game keeps moving, but allows for beer drinking and plenty of jokes.
