I think Gilligan knew he only wanted one more season after the showdown with Gus. That was the series climax, season 5 was the downfall. There was nowhere to go but down after that, and the fall has to come relatively quickly. Dragging that out for 2 or 3 more seasons would have been a huge mistake.
