I had the opportunity to listen to a fine chef in conversation the other day, for about a half hour. He said "phenomenal" at least four times. Not grating like Ramsay…but I began to think it's part of the profession or character of being a chef.

What really bugged me, is they said Kathy's lobster was executed perfectly, while her salad was so-so (actually, Graham liked it). And Luca's lobster was pretty flawed while his salad was fine. Isn't the protein/main dish more important than the side?
