The Beta Band - big in the UK, but never got the same treatment in the US before dismantling. Most everyone loves "the three EPs" (for good reason), but equally impressive (to me) was "hot shots II". Great album start to finish.

My gateway was Hocus Pocus, and I still believe it's one of his greatest, despite being lesser known or acclaimed (at least among the people I've talked to).

Phish
Phish's fall tour in 1997 was their best ever, imo.

"Only in Dreams" - Blue Album. The layered guitars and build up to crescendo at the end are what do it for me.
