I need to get a copy of that- I keep looking at it in the bookstore and slavering because everything looks so amazing.
I also like thin-sliced zucchini (or zucchini "noodles", if you have one of those spiralizer things) in place of pasta.
I love spaghetti squash, especially because it's super-easy to cook and comes out great in the microwave. Just cut it in half, put it in a dish with a bit of water, cover with plastic wrap, and nuke for 3-4 minutes. Then you can just scoop out the strands and add sauce, etc.
