I love Giacchino. His Star Trek score was great, and the track he composed for Cloverfield's end credits were great. However, I don't think that you can just replace John Williams and use some of his themes. Here is a Film primer that the A.V. Club put out a while back. 4/5 of the films that they list as essentials are on Hulu Plus, and the other one is on Netflix. I've also never seen a Kurosawa film, so I'm starting with Seven Samurai.
