Moonshine Holler has the best ratio of good theme song to middling segment, but I love "Here's To Us" and the Sparks Nevada theme too.

I love Paris, and Concert Interruptus felt like the first real Paris episode. I especially liked how she seemed to be impressed and looked up to Lorelai.
John Hannah has his own comedy cop show now, A Touch of Cloth (written by Charlie Brooker and Dan Maier).
But as demonstrated this episode, the Chief still thinks he's psychic (which she's done before).
