The real point is that Hank had an epiphany and put all the pieces together. He has been gathering information for the last several months and may have been in denial. The inscription was just the last piece of the puzzle but it wasn't the only information Hank had.

Hank didn't figure out Walt was Heisenberg until after the prison murders, when he was doubting his calling in life because he realized that he was dealing with a "monster." If it had been earlier it would have been bad, but Walt wouldn't have been responsible anything like that carefully coordinated bloodbath.

I was wondering that myself. Couldn't he have left her a note in the soda cases? Still, it was a really effective image showing how pointless and bothersome it would be to stockpile any more cash.
