Matt Saracen can play slot WR as well as QB.  That's some pretty legit versatility for ya.  If he puts on about 15 lbs or so, I could see him getting recruited.  Obviously he's not a pure pocket passer, however he does possess some scrambling ability and of course the afore-mentioned ability to play WR.
