Literally, it is reduced cream, butter, and Parmesan (or similar) cheese mixed together, sometimes with paprika. Whether that is Italian, I have no idea. Basically, it is thick, salty cream.

I guess the key is not going crazy with the peanut butter, which is hard to do because I love peanut butter.

There's a really big difference in texture (and some in flavor too) between canned and fresh peas. I'm not as concerned with my ears since I put sunscreen on those regularly. I don't put sunscreen on top of my head because there is still some hair there and it looks doofy with sunscreen all matted in it, so wearing a hat is preferable (though I do still put sunscreen on the 'parking lots' even if I'm wearing a cap).

I like the addition of peas, but they really should be fresh peas, which are hard to come by. Frozen peas would be okay. Canned peas, though I do love them, should not be in a carbonara.

Garlic is usually a great addition to almost any dish, but burned garlic is the devil.
