You might as well ask why anybody has ever tried to make any sort of statement using anything except plain language.  Asking "why poetry" is the same as asking "why painting" or "why music" or "why sculpture."  It's the art of the thing as much as it is any particular idea.

On the contrary, the vast majority of poems follow rules: even free verse isn't always entirely free.  It's just that many poems use rules on an ad hoc basis, and many readers aren't necessarily familiar with what the rules are.

Speaking as a writer of poetry, I think poetry can actually be crystal clear and cutting, or it can be obtuse.  Neither approach is really typical of the art form as a whole.  There are plenty of very good poems with very apparent meanings.  There are others that don't seem to mean anything at all.

Absolutely the same.  /ɔ/ is actually a little awkward for me to produce in isolation, and when I hear it it just sounds like an affected /ɑ/.
