The Sunday brunch restaurant being named "Skip Church's" is a joke that I didn't notice until my fifth time through the series.

I don't think so… I feel like we would've heard something about it.
Fortunately, I think it's three 22-minute shows left and one 44-minute show. New episode tonight, on the 17th, 24th, and finale on the 31st.
So 30 Rock only has about an hour and 45 minutes total of new content, across four episodes. Does this make anyone else really sad?

Right. So Trilogy Time apparently occurs in April 2015. And the baby appears to be about five months old at that time. So she was born in December 2014-ish. So The Wife™ got pregnant in March 2014-ish. If the show ends in May 2014, it may be impossible for the title of the show to be taken literally.
The final episode on Christmas night? That is cruel.
