It's good to see both characters were flawed. Yes, the Stan we got to know and care about probably did meander more and take the "easy road" (which, given his mother was a phony psychic for a living and his dad was a tough one that wanted someone to get the family out of that small town, it's not difficult to see why…
I mean, grandparents help out in raising their grandkids all the time, it wouldn't have been a permanent situation. Maybe just for the evening while Shermy went out. It just seems like a simpler out if the show did make a mistake timeline wise. Y'know, for the nitpickers/conspiracy theorists of the internet.

About the age of Shermy, it's been suggested that maybe the baby shown is Dipper and Mabel's dad, aka Shermy's kid? Otherwise if the kid is Shermy then there were two generations of teenage pregnancy going on.
