A few too many zombies though and all of a sudden they've trapped themselves in a cell block having given the zombies no reason to leave (and that's presuming something doesn't give way at some critical zombie mass). Plus, the Repetitive Hallways of Doom and Gloom seemed like they were book-ended by proper doors

The latter could be airborne while the former could be saliva-based (which accounts for the blood-to-blood transmission issues).
