Especially considering that it seems like this release meant to capitalize on its good bad movie status, the grade seems a little off, though I guess what else can you do with something whose biggest asset is its terribleness?

I'm pretty sure the 2009 Monkey Island contains a port of the original game. You can shift between the original graphics and the revamped ones. I got it on the App Store for like $10, haven't played it much though.
