After reading these two comments, I've suddenly started thinking of Fireflies as interplanetary DC3s. There would always be some crashed one on the edge of a desert airfield from which you could get a spare valve cover or something.

That scene at the dinner table is so good, every time I watch the episode I'm surprised all over again by how good it is.

I thought Fillion really nailed that as "desperate + practical" rather than arrogant. He seemed to know what he was asking Wash to do.

Why did they do that? 'Being a spy on Mars' is exactly the kind of ridiculous  fantasy a cheesy fake-memory-holiday company would sell, and the whole gag of the story is that it turns out that that ridiculous fantasy might be true. Dammit.
