I am sure they are either headed to Mereen or North to help Sansa, but many commentors have implied that I am crazy for even considering that Theon and Yara might not be headed towards Dany. While I think that is the likely outcome, it is within the realm of possibility that Theon has decided to help Sansa

I suspect that it was pretty easy. It didn’t seem like there were that many men at the Kingsmoot and I’m guessing they are the only ones who know Euron had returned. So Yara and Theon could have gone into the village and easily convinced others to sail with them.

Ah yes, in one episode played by an unnamed extra. Pretty much no one would remember her. Hell, I’ve read the books and I forgot she made an appearance on the TV show because it was so brief. At this point I’d say the odds of Jeyne Poole showing up again are even worse than those for Lady Stoneheart.
