Launcher pro has a scrollable dock that you can put multiple rows of icons on. It doesn't work to put ALL your apps on, but 15 or so can be there and you can just swipe back and forth

Ubuntu 11.04 has some serious issues with synaptic touch/clickpads. It is either scroll is broken, or right click is broken, or multi-touch is broken.
