Fair enough, but when you're talking about representing a wider range of viewers, why not include Indian actors when it's such an obvious choice in a hospital setting?

But I think the point is that Grey's is supposed to be more "racially realistic." This article states Rhimes "highlighted her commitment to creating fictional worlds that are as diverse as the one she lives in." In the real world, it seems that doctors of Indian descent are at the very least a significant minority.

Grey's Anatomy's Seattle Grace Hospital is apparently based, at least in part, on Harbor View Medical Center in Seattle. (Or so someone who works there told me recently).
