Yep, I spent 20 hours or so grinding in Limgrave because I couldn’t progress past Margit. I hated that the first story boss was such a big roadblock that I was stuck in the starting area.

This is what frustrates me.  I want a game that offers the same level of character building and world exploration.  But I want it without bosses that have tens of thousands of health that only take 100 damage per attack and expects me to have 8 perfectly timed dodges in the span on 1.5 seconds.

You’re not alone. Very similar experience. I knew going in what to expect but the non stop glowing praise and hype finally got me and I pulled the trigger and bought it.
